The day may have begun with the scent of fresh mint and peas, but it ended on a note of rosemary and citrus with plenty of other heady delights in between! First there was the Flourless Apple, Almond, Raisin & Ginger Cake. I discovered it when preparing for India’s workshop last year, and I somehow now feel that its India’s cake, so I thought I’d make it all over again. It’s from a recipe I found on the Gourmet Traveller website and as I recall, is delicious…..
Even if it does seem to require the use of every pan and gadget in the cupboard! It has three different concoctions that end up folded into one and other, plus a topping…
Let’s hope it tastes as good in the morning as I remember from last year!
Then there was cumquat ice cream to get underway….
Just look at the colour of our chookies’ yolks before being folded through the cream!
Next were our sweet navel oranges to zest and squeeze, before adding them to bright red stalks of rhubarb, to bake with star anise and cardamom pods.
And finally, just before dusk, bundles of rosemary made their way to the Dairy for tomorrow’s early start….
