To successfully grow a LARGE specimen of any kind always seems a miracle to me. Growing to a decent size requires time, and therefore more lengthy exposure to the elements…..including wildlife. So I’m just thrilled that this is the third aubergine of spectacular size (as well as texture and taste) this season. I also have the Listarda di Gandia variety growing – the one that has beautiful purple markings, but it rarely fruits ’til much later in the season.
The smaller Lebanese variety is a safer bet where pests are concerned (as are cherry tomatoes): they grow quickly, are equally delicious and I collect and save them up til we have enough to eat. Just a few more and we’ll have our own Baba ghanoush!
